Ceremonial-grade in a tin for whisking, and a daily pouch for lattes — because they were never the same thing.

Most people buy one matcha and are quietly disappointed by it twice.

The first time is when they whisk the cheap one. It is flat and it is bitter, and they decide they must not like matcha. The second time is when they pour milk over the expensive one — the tin they saved up for — and cannot taste it at all. The milk swallows everything they paid for. Neither disappointment is their fault. They were sold one powder and given two jobs.

In Japan nobody does this. The tin on the shelf is for whisking, and it is opened for a bowl of thin tea and very little else. The everyday bag is for lattes, for iced tea in August, for the sponge cake in someone's kitchen. Two grades, two purposes, and no one confuses them.

So that is what is in this box. A tin of ceremonial-grade Uji matcha, chosen for the bowl — shaded before picking and stone-milled, which is what makes it worth drinking on its own. And a pouch of everyday matcha, chosen to stand up to milk and ice and still taste of something.

You will get through the pouch and still have the tin. That is the correct order of things.

A note on the word. “Ceremonial grade” is how this tea is sold in English. Japan has no such grade — there is no board, no certificate, and no line in any regulation. The phrase has stayed because it points at something real: leaf grown under shade, stone-milled, and meant for a bowl rather than for milk. That is what is in the tin. The longer answer is here.

What’s inside

Ceremonial tin, 30g — for whisking. If you do not own a whisk, a small electric frother will get you most of the way for a latte, though not for a proper bowl of thin tea — for that you need a real whisk, and I would rather tell you that than sell you a box that quietly does not work. If you are starting from nothing, the Whisk & Matcha set is the honest place to begin.

Add the sifter — $26

Matcha clumps in the tin, and those clumps never whisk out.
